Combine all ingredients (except the chicken) for the marinade.
Pour over the chicken and marinate in the refrigerator for at least 3 hours, or overnight.
Roast chicken in a 425 °F (210 °C) Until Golden Brown
At this point, I turn the oven off- don't open it- and leave the chicken in for another 1/2 an hour.It also cooks the chicken beautifully
I often add about 1 tsp of crumbled, dried rosemary to the chicken- this is fantastic and it then becomes oregano-rosemary-lemon-garlic chicken).
