lemon salmon kebabs

Combine the zest and juice of the lemon with the garlic and half of the oil.

Add the cubes of salmon to the dressing and leave to marinate for 10 minutes.

Thread the salmon cubes and lemon wedges onto wooden skewers and grill for 10 minutes, turning after 5 minutes, drizzling with any remaining dressing.

Serve with watercress.
