This recipe is one I got from my Mum and my 6 year old girl absolutely loves making the "lemon curd ice cream"!
Place 4 of the meringue nests into a freezer bag and break them into small pieces 1-2cm in size - try to avoid making too much dust.
Pour the double cream into a large mixing bowl and whip to a soft peak - it should not pour out of the bowl when tipped.
Add the jar of lemon curd and mix in.
Add the cumbled meringues and stir in gently so as not to break them up further.
Add lemon juice to get the desired sharpness. Taste often!
Pour into individual ramekins or a freezable container and then freeze until set.
You can use more or less meringues depending on how many "surprises" you'd like!
You can serve it garnished with strawberry slices or a little grated lemon rind.
You could substitute the lemon curd for any other type of fruit curd.
