I have found this recipe online few years ago and adapted it to my family liking. It is always a big hit at any party. Very cheap and easy to make using everyday ingredients. Try it and you will not be dissapointed.

In a bowl, mix zest, oil, eggs and sugar

Add remaining ingredients and mix well.

Pour into greased ring tin and bake at 180 C for 30 minutes or until its ready (depends on the size of the baking form)

Combine sugar and lemon juice. (depending on your liking) heat it microwave or on the hub. 150ml of syrup should be enough for the cake moisture.

Take out and poke holes all over with a skewer and pour over the syrup.


You can use vanilla yoghurt. I use natural yoghurt as vanilla yoghurt might be quite sweet. Use as much lemon zest and juice as you like. Use lemon zest to decorate the cake. Serve with ice cream or creme fresh.

  • 4 tsp lemon juice
  • 2 grated lemon zest
  • 3/4 cups Vegetable oil
  • 1 cup natural yoghurt
  • 100g Sugar
  • 2-3 Lemon juice
