Boil lentils for 25 mins
Add the broccoli and boil for 4 mins
Heat the oil in a frying pan, add the onions and fry gently for a few mins until golden.
Whisk the eggs, milk nand seasoning and add the herbs.
Add the drained lentils and broccoli to the onions.
Add the tomatoes and pour the egg mixture evenly over. Fry gently for 5 mins. Put under a preheated grill for a few minutes until golden.

Alternatively bake this at gas mark 5, 190C for 10 minute. Push the egg mixture into the centre allowing raw mixture to go to the edges return dish to the oven for 15 mins serve warm cut into wedges garnish with fresh herbs.
