Heat the sunflower oil in a large casserole dish over a medium heat. Sweat the onion, garlic ginger and carrot for 6-7 minutes, stirring occasionally until softened. Add the ground spices, chilli powder and seasoning, stir well and cook for a further minute, stirring occasionally.
Add the lentils and raisins and cover the mixture with the water. Simmer for 15-20 minutes, then add the peas and simmer for a further 1-2 minutes. Remove from the heat and adjust the seasoning if necessary.
Spoon into a serving dish and garnish with coriander leaves.
