Boil up the 3 pints of water and crumble in the stock cubes. Put this liquid into a large pan.
Place this onto the gas or electric ring and turn up the heat to full
Peel and chop up all the vegetables into approximately 1“ pieces and throw them into the pan. The add you lentils
Once the liquid starts to boil, turn down the gas or electric so that it is simmering. Leave this for about 1 hour stirring occasionally. Then after an hour take from the heat and mash all the ingredients in the pan using a potato masher. Stir bring to the boil again, turn off gas or electric ring and then serve
You can use this soup as a starter or just on it‘s own with nice crusty bread. Especially nice on cold winter nights
