Bring a pan full of water to the boil and add a generous handful of salt to the water. Add the linguine to the boiling water and cook according to packet instructions. Once cooked, drain the pasta, reserving a tablespoon of the cooking water.
In the pan you have just used, heat a glug of olive oil. Add the garlic, if using, and cook for about 30 seconds. Add the chopped red chilli and cook for about 10 seconds. Add the prawns and cook until they have turned pink. Next add the reserved cooking water, the cooked linguine and lemon juice and finally the rocket and cover the pan.
Turn the heat off and leave for a few minutes. Stir everything together and season if required.
Tip: You can also do a nice meat-free version with roasted cubes of butternut squash instead of the prawns.
