I‘m an avid lover of all curries and all Thai food, and a dedicated healthy eater. This recipe is quick and easy to prepare, and it hits all of my buttons!
Grate the cauliflower or use a food processor to shred it into small pearls. (Note: to speed this step up, you can substitute Tesco Cauliflower Cous Cous and prepare according to instructions.)
Steam the grated or shredded cauliflower for 10 minutes until it is fully heated and has become tender.
While the cauliflower is steaming, heat the Quorn Meat Free Chicken Fillets according to your method of preference, either in the microwave or on the hob.
Cut the Quorn Meat Free Chicken Fillets into strips or chunks. Be careful not to burn yourself, as the fillets will be hot!
Cut the red pepper into short strips or dice it into pieces.
Prepare the Tesco Healthy Living Beautifully Balanced Thai Green Curry Sauce on the hob according to the instructions on the package.
When the sauce is hot and ready, add the Quorn Meat Free Fillets and red pepper (as well as the bamboo shoots, if using). Simmer for 5 to 10 minutes.
Shortly before the dish is finished, add the Thai basil if using. Simmer for a few more minutes after adding.
Serve the curry over your prepared cauliflower “rice“ (or Tesco Cauliflower Cous Cous).
Don‘t need to go low-carb? Instead of cauliflower “rice“ or Tesco Cauliflower Cous Cous, try real coconut rice, jasmine rice, or cous cous.
Don‘t need to go vegetarian? This recipe works great with diced chicken breast, slivered turkey steak, or pre-cooked chicken pieces.
Want to bulk up this recipe? Try adding spinach, pak choi, yellow or red onion, aubergine, courgette or steamed or boiled potatoes.
