I recently discovered that I was lactose intolerant so I've been learning to make my favourite dishes with new ingredients!

Gently fry the garlic and bacon together.

Bring a large pot of salted water to the boil and cook the pasta according to the directions.

Meanwhile combine the egg yolks and cream.

When the pasta is al dente drain it and return it to the pot.

Add the hot bacon and garlic mixture and stir.

Add the Parmiggiano Reggiano and the cream mixture, stir into the hot pasta.

The sauce should just coat the pasta, if it's too runny you can stir it constantly over a low heat until it reaches the correct consistency.

You can use single cream in place of the Lactofree cream if lactose intolerance isn't an issue. Most hard cheeses which have been aged for an extended period have little to no lactose so pose no problem to those with lactose intolerance. If you check the nutritional information and it states there is no sugar present then that also means there is no lactose since it is a sugar.
