Remove the stones from the damsons and peel and chop the apple. Place the fruit and sugar in a pan and start to gently simmer the until soft. Set aside and leave to cool.
Grease a 20cm (8inch) pie apple plate.
Place the flour, almond, lard, butter, salt and sugar in a food processor and pulse for 3-4 seconds until the mixture resemble fine breadcrumbs. Add in the egg yolk and the milk, (while the processor is on) a little at a time till the mixture forms a dough.
Roll out half of the pastry and line the bottom of the pie plate. Spread the cold fruit filling on the pastry base. Roll out the rest of the pastry. Cut into strips. Arrange the pastry strips in a lattice pattern on the pin. Trim off excess pastry.
Bake the pie in an oven 190°C, 375°F, Gas mark 5 for 25-30 minutes.
Remove the pie from the oven and leave t cool. Finish by sprinkling the top with caster sugar and serving with clotted cream or ice cream. Delicious!
