Mac and Cheese recipe

Place the Macaroni in a large saucepan, cover in water and boil until al dente
Drain the macaroni, keeping 150ml of liquid to one side
Place the liquid in a clean saucepan and add the cream cheese
Over a medium heat stir continuously until it has melted
Chop the Taleggio into chunks and add to the liquid
Continue to stir until melted
In a seperate frying pan fry off the pancetta pieces
Add the juice of the lemon to the cheese mixture and stir through
Add the pasta, parsley and pancetta to the cheese mixture and stir
Pour the mixture into an overproof dish and sprinkle with parmesan
Bake for around 25minutes until golden a 200 degrees

Pancetta can be cooked in advance

  • 200g - Taleggio cheese
  • 1 - Lemon (juice only)
  • Handful - Curly Parsely
  • 50g - Parmesan
