Heat oven to 190C/ fan 170C/gas 5.
Cook pasta according to pack. Whilst this is happening........
Melt the butter in a saucepan and mix in the flour to make a roux. Cook for a couple of minutes
Gradually add the milk to make a sauce, then simmer for a few minutes to thicken. Sauce is thick enough when you can trace a line on the back of your spoon .
TIP- If you warm the milk first before adding to the roux this can help avoid lumpy sauce!
Turn off the heat and stir in 75g of cheese into the sauce.
Strain the pasta and put this into an ovenproof dish, gently mix in the tomatoes and ham and add the cheese sauce. Stir to combine.
Take the remaining cheese and crushed crackers and mix them together. I find putting them in a plastic bag and shaking it works well.
Sprinkle the cheesy cracker mix over the top of the macaroni cheese and put in the centre of the oven.
Bake for approx 30 mins or until nicely golden brown.
