Pre-heat the oven to Gas 4, 180°C, fan 160°C.
Grill the bacon until crisp then set aside.
Bring a large saucepan of water to the boil and cook the macaroni according to the pack instructions.
While the pasta is cooking melt the butter in a small saucepan. Once it has melted, add the cornflour and make into a smooth paste. Add a little milk to loosen the paste then gradually add the remaining milk to avoid lumps forming. Bring to the boil, stirring all the time until the sauce has thickened.
Remove the pan from the heat then mix in the cheese, stirring until it has all melted in. Add salt and pepper to taste then finish off with the teaspoon of mustard.
Drain the macaroni, put it back into the pan you cooked it in and add the cheese sauce. Add the bacon to the pan and mix until it is all evenly covered. Pour into an ovenproof dish and place in the oven for 15-20 minutes until bubbling and golden.
Tip: Try using salmon or sausage.
