This cake is delicious with a glass of Madeira wine.
Cream butter and sugar with a food mixer till light and fluffy. Beat in eggs and lemon rind. Mix in flour.
Line and grease a 18cm. cake tin with greaseproof paper. Transfer the cake mixture into a the cake tin.
Decorate the top with candied peel.Bake in the oven 180C/350F/Gas 4 for 45 minutes until a clean skewer insert into the centre and come out clean.
