My little girls and I absolutely love baking together and this is something they really enjoy doing with me. It is a very simple recipe to make and very easy to decorate for them!
Heat your oven to 200C/180C for a fan assisted oven or gasmark 6
Into a large mixing bowl, place the butter, icing sugar, golden caster sugar, egg yolks and vanilla essence and mix / beat with a wooden spoon until it is nice and creamy
Add the flour in 2 batches - mixing in fully before adding the second batch
Stir in the Orange Zest
Mix and Knead together until you have a nice doughy consistency.
If you want you can place the dough / pastry mixture into clingfilm and into the fridge for about 30 minutes
Place a little flour on the worksurface and on your rolling pin to prevent the pastry sticking to your worksurface
Roll out your dough into about 22 equally sized balls (if you aim for about the size of a walnut it‘s best)
Put them on a baking sheet on a baking tray and bake in the oven for about 15 minutes until they are a lovely golden colour
Remove from the oven and leave them to cool
Whilst they are cooling, prepare the icing by mixing the sifted icing sugar in a large bowl with the orange juice to make a thick icing
When the biscuits are cool, dip half of each biscuit into the icing and then dip the half that is covered in icing straight into the hundreds and thousands or your chosen sprinkles!
Leave them on a wire rack to cool
They also taste fantastic dipped in melted chocolate instead of icing sugar + sprinkles. You can also use these amounts to make more cookies (if you make them smaller) or can make them larger
