Preheat oven to 200°C/400°F/Gas 6.
Heat the olive oil in a pan and fry the onion gently until soft and lightly gold. Add the garlic and pepper and cook until soft. Add the chorizo and fry until the fat renders and the sausage starts to crisp.
Transfer the mixture into a ramekin or earthenware dish, then crack the egg on top. Bake in the oven for 5-7 minutes, depending on how you like your egg. Serve with plenty of crusty bread on the side.
