Malaysian Fried Rice recipe

Heat 1tsp oil in a wok. Beat one of the eggs, add it to the pan and fry so that you end up with a small, thin omelette. Remove this from the pan and set aside. Repeat with the second egg.
Roll the omelettes together and shred to create ribbons.
Wipe the wok clean and replace over a medium heat. Add 1tbsp vegetable oil and gently fry the shallot, chilli and garlic until soft.
Add the chicken, prawns and vegetables and cook for 5 minutes, then add the rice. Mix together the chilli sauce, soy sauce and sugar in a small bowl and pour over the rice as it cooks. Stir well and cook for a further 2-4 minutes.
Serve into a bowl, sprinkle over the shredded omelette and a final sprinkle of sesame oil.

Fried rice dish containing chicken/seafood (optional), vegetables (onion, peas, mixed veg). Can be made less/more spicy.

Best topped with omelette and dip of greek yoghurt.

A little dish of fresh tomatoes in soy sauce is a very taste side dish to accompany the meal.

Also can have with roti/naan.

  • 100g (3 1/2oz) - cooked cold chicken, shredded

  • 250g (8oz) - rice, basmati, cooked
  • 2 tbsp - chilli sauce
  • 1 1/2 tbsp - dark soy sauce
  • 1 tbsp - sugar, brown
  • sprinkle - sesame oil
