This refreshing sorbet made with tangy limes and juicy mangoes is a delicious dessert.
Place the mango into a food processor and blend until smooth. Set aside.
Place the grated rind and juice of the limes into a heavy based saucepan along with the sugar and 1 pint water. Bring to the boil then continue to boil for 10-15 minutes until a syrup is formed. Remove from the heat and set aside to cool. Once cool strain the mixture through a sieve into a bowl.
Whisk the egg whites until just frothy, then fold into the mixture and pour into a freezerproof container. Freeze for 2 hours then remove from the freezer and mash with a fork and stir well, before returning to the freezer and freezing until solid.
Serve in balls with mint leaves scattered over and extra lime zest if liked.
