Wash the dahl 3-4 times in cold water.
Place the dahl in a saucepan and cover with plenty of cold water. Bring to the boil with a tsp of sea salt and a tsp of turmeric, boil for 10 minutes.
Reduce the heat and simmer for a further hour ensuring the saucepan doesn’t dry. Add more water if necessary.
Fry the onion, garlic and cumin in the oil for 1–2 minutes, add the chilli, chopped tomatoes, mustard and mango and fry gently for a further 3–4 minutes.
Add the prepared dahl, mix well Cook for a further 2–3 minutes, add more water if necessary.
Garnish with chopped coriander and sere with boiled Basmati rice or chapattis with yogurt.
