Use 1/2oz butter to grease a deep ovenproof dish. Add the rice, vanilla sugar, caster sugar and milk.
Stir to mix and cover with foil. Bake in the oven at around 160-180C for up to two hours
Core the apples and cut each apple into 12 wedges. Dice the butter and add to brown sugar
Put the apples in an ovenproof dish and sprinkle over the sugar/butter mixture.
Bake in the oven for 15 mins, then pour over the maple syrup and return to the oven for a further 15 mins
To serve spoon some of the apple wedges and maple sauce over a bowl of vanilla rice pudding
