Mashballs recipe

Boil some water, whilst the water boils peel the potatoes and cut into small pieces. Once the water is boiling cook the potatoes for about 15-20 minutes until very soft. Drain the water and mash the potatoes with a knob of butter and a splash of milk. If the mixture it too dry add more milk to get the right consistency.

Form the mash into balls (as many as you can make). Once made into a ball get a teaspoon and make a hole to the centre of the ball, in the hole place an unstemmed buttom mushroom and some cheese and then cover with more mash to close the hole. Repeat this process with the other mash potato balls.

Dip in batter or crumb if preferred and deep fry for about 5 mins at top setting in electric fryer.

Tips: Make the mash as smooth as you can but not sticky -I like a touch of cinnamon in the mash.

Do as many as you like with the same or varied filling.

I found that my fryers basket could hold about eight medium sized balls. 

Serve with salad, curry sauce, chilli dip and remember to eat with care as the inside can be very hot!
