Cook the potatoes in a pan of boiling water until soft.
Drain and mash.
Take a large tablespoon of mash and make a cup of it in your hand.
Place a mushroom inside, then press in some grated cheese,
Squeeze the mashed potato around the mushroom to totally enclose it.
Heat the oil until a piece of bread dropped in starts to sizzle. Cook the mashrooms in batches, until golden.
Be careful when eating as the melted cheese inside can be very hot.
