I am on Slimming World so I made this with spray oil and SW meatballs to make it 'syn free'.
Chop the onion and garlic cloves and put it in a pan with some oil. Lower the heat after 1 or 2 minutes and simmer until soft.
Add the meatballs and cook for about 15 minutes in a medium heat.
Take the meatballs out and set aside.
Add the asparagus, spinach, vegetable soup mix and carrots; then add the stock and bring to the boil. Lower to a medium heat and cook for 20-30 min.
Blend the soup (remove some water if too liquid) and add the quark. Stir. Add the meatballs.
In a different pot, cook the pasta according to the packaging label.
Add the pasta to the soup and meatballs and let it rest for 10-15 min before serving.
Serve with grated parmesan cheese.
