Pre-heat the oven to 200°C (180°C fan) or Gas 6.
Put the onion, garlic, courgettes, red peppers, tomatoes in an ovenproof dish. Season with salt and ground black pepper and drizzle with olive oil. Stir well to make sure all the ingredients have a good covering of the oil. Add in the passata, then give everything a good stir.
Put the dish in the oven and cook for 40 mins, stirring halfway through. The vegetables should be cooked through at the end of the time, if not, then keep them in for a few minutes more.
Add the prawns and feta and stir in and place back in the oven for 5-10 minutes. Check after 5 mins to see if the prawns are cooked through, if not pop back in, otherwise serve and scatter with basil leaves.
Serve with rice or pasta and a green salad.
This is a good store cupboard dinner and vegetables can vary depending on what you have. As an alternative try parsley instead of basil for a more greek flavour.
