Melon and ginger refreshers recipe

Quarter and de-seed the melon and remove the skin. Cut the flesh into bite-sized chunks and place in a bowl. Combine the ginger, lime juice and honey in a small bowl and drizzle over the melon; stir well to coat the melon. Cover and chill for 30 minutes. Spoon the melon pieces into four serving glasses. Remove mint leaves from stalks and finely chop - sprinkle over the melon to serve.
