Pre heat the oven to 180c
Beat the butter and sugar till light and fluffy.
Gradually beat in the cornflour, then the flour.
Knead for a minute (you can add a bit more flour if the mixture is too sticky) then roll out to 1/4 inch thick.
Cut into rounds and place on a floured tray at least a couple of fingers width apart.
Bake for 15mins or a wee bit less till very light golden. Sprinkle with a wee bit of caster sugar as they come out of the oven if you like. Cool on a wire rack.
Store these in an airtight container.
