In a large bowl, mix mince, parsley, nutmeg and cayenne with your hands. Split the mixture into four and shape into a ball shape and fill the middle with cheese, then fold the mince back over to cover.
Flatten the balls into a burger shape and chill for about 30 minutes or longer if you have time.
Preheat grill to medium, place burgers onto grill tray and cook for approx 6 minutes on each side or until brown and cooked through.
Serve with potato wedges or in a bun with thickly cut tomatoes.
