Fry the onion and lamb until browned. Add tomatoes, celery, carrots and crushed garlic and the pieces of chopped chorizo. Finaly add a handful of the shredded cabbage. Add 1 litre of vegetable stock and season with salt and pepper.
Cook on the hob for about 1 hour on a medium heat until all the vegetables are tender.
Next, add spaghetti and cooked canellini beans. Break the pasta into small 1" long pieces, put in about 10-15 strands of spagetti or a small handful.
Continue to cook on a medium heat for a further 10-12 minutes until the pasta is soft, serve with grated Parmesan and warm crusty bread.
You can add other vegetables according to taste, such as mushrooms or remove vegetables you may not like as much. The minestrone tastes great if left to stand for an hour to let the flavours infuse together or even the following day.
