I devised this recipe as a student when I needed to lose weight and tried to think of a food I liked that could be adapted to be low fat but tasty. Late night kebabs were the inspiration! We automatically think of a kebab as being unhealthy, but this is mostly salad with a piece of chicken and bread.

Cut the chicken breast into six roughly equal cubes and grill under medium heat, turning once, until golden

finely shred the cabbage, lettuce and onion and thinly slice the cucumber. Place them in a bowl and toss with the oil and juice of the squeezed lime, add a dash of chilli sauce to taste.

warm the mini pitta bread, either under the grill or in a toaster

slice open each pitta and fill with a piece of chicken and the mixed raw salad and a slice of tomato. Drizzle with further oil or chilli sauce as preferred

Use a food processor to shred the cabbage, onion and lettuce. If you don't like the spicy element, dress the salad in natural yoghurt instead.
