mini coffee and hazelnut pavlovas recipe

I love to cook for dinner parties and love serving 3 mini desserts rather than one!

whisk egg whites till just stiff, add sugar one tablespoon at a time, stir in hazelnuts and combine well

place heaped tablespoons on a tin lined with parchment paper, with back of spoon make a small indent in each to allow cream to sit in, cook for 1hr at 100C and allow to cool in oven

whip cream till peaked and add cold coffee, mix well and divide between cooled meringues, decorate with melted chocolate and glitter

brown caster sugar can be used for a more caramel colour and taste and if you don't like coffee just use melted chocolate instead the cream can be placed on the pavlovas up to an hour before serving, any longer and they will soften slightly, but still yummy!
