This rocky road is choc-full of treats. Digestive biscuits, marshmallows and orange-flavoured chocolate eggs all go into this easy no-bake fridge cake. See method

Ingredients

  • 150g milk chocolate, chopped
  • 200g dark chocolate, chopped
  • 125g butter, diced
  • 100g golden syrup
  • 150g digestive biscuits
  • 2 x 80g bags orange-flavoured chocolate mini eggs
  • shredded zest of 1 orange
  • 65g mini white marshmallows

Method

  1. Line a 20cm square baking tin with baking paper. Put the chopped chocolates, butter and golden syrup in a large, heatproof bowl set over a pan of barely simmering water, making sure the water doesn’t touch the bottom of the bowl. Heat, stirring occasionally, until melted and combined. Remove from the heat and set aside to cool for 10 mins.
  2. Put the biscuits in a freezer bag and bash with a rolling pin into chunky pieces of differing sizes; set aside. Lightly crush most of the orange-flavoured chocolate eggs, reserving some whole for decorating; set aside.
  3. Stir the broken biscuits, half the orange zest and most of the marshmallows and crushed mini eggs into the melted chocolate mixture. Tip into the prepared tin, level the top and then decorate with the remaining marshmallows, orange zest and whole chocolate eggs. Set aside for 20 mins, then transfer to the fridge for at least 1 hr or until set.
  4. To serve, run a sharp knife under hot water, wipe dry and then slice into bars. The rocky road will keep for up to a week in an airtight container in the fridge.
