This recipe is so easy to make. It is lovely for a street party.
Rub 50g of butter into flour using an electric hand mixer. Add in caster sugar, lemon rind and bind the mixture with milk to form a soft dough.
Turn the dough out onto a flour board. Roll out the dough to 1 cm thinkness. Use a 4cm pastry cutter and cut into 18 round scones.
Transfer the scones onto a baking tray and brush with beaten egg. Bake in a preheated oven 230C/ gas 7 for 10 minutes until golden brown. Leave to cool.
Meanwhile, cream the remaining butter with the icing sugar. Beat in the lemon juice. When the scones are cool, split into half and sandwich each scone with a teaspoon of lemon cream.
