I really love this recipe becuase it have got the lovely sweet and fruit taste of the apricot. It is idael for a street party.
Mix sausage meat, herbs and apricot in a bowl.
Roll out the pastry to 1/2 cm thickness. Cut the pastry into 4 strips of 8cm X 30cm. Shape the sausage meat into 4 long sausage shapes. Place in the centre of the pastry.
Roll the pastry over and seal the edges. Brush with beated egg. Cut the sausage roll into 4 cm. length.
Place the sasage rolls on a baking tray and bake at 220C/gas mark 7 for 20 minutes till golden brown.
