Preheat the oven to 220C and place a 12 hole silicone muffin tin in to heat up.
Sieve the flour into a large mixing bowl and make a well in the centre. Beat the egg into the milk and then begin to whisk the liquid into the flour, until you have a smooth lump free batter. Set aside.
While the batter rests peel and dice the potatoes, bring a large pan of water to the boil and add the potatoes. Boil until they are soft then mash with a little butter and milk.
While the potatoes are boiling heat a frying pan on a high heat, add the sausages and fry until evenly browned. Remove from the pan and cut each one in half.
Carefully take the muffin tin out of the oven and put two pieces of sausage in each mould. Divide the batter evenly between the moulds and return to the oven. Place the tin back in the oven and bake for 20 – 25 minutes.
While the toad in the hole is in the oven finish the mash and prepare the vegetables. Finally make up the gravy according to the packet instructions and you are ready to serve.
