Preheat the grill to hot. Place the tofu, olive oil, breadcrumbs, parsley leaves and seasoning in a food processor and pulse until coarse in texture. Remove and shape into 8 small, even patties. Arrange on a baking tray line with nonstick baking paper.
Grill for 12-14 minutes, turning occasionally until lightly coloured. Use a 5cm cookie cutter to cut out two rounds from each piece of burger bun; you should have 8 tops and 8 bottoms. Remove the tofu patties when ready and place on the 8 bottom halves. Top with a few slices of tomato and a sprig of coriander leaves. Arrange the tops in place. Serve immediately.
