You can add any veg you like, it's a great dish to hide veg in for children and works well with finely diced peppers, courgettes etc.
Dice the onion and mushrooms and fry till soft. Add the lamb mince, fry till browned.
Add the lentils and vegetable stock then the garden peas. Leave to simmer for a few minutes and add the mint sauce & soy sauce to taste.
Season with a little salt & pepper, leave to reduce while you cook the rice (1 measure rice to 2 measures water, simmer till water reduced) and serve.
