These flatbreads are perfect for taking to work for lunch, use a different flavour houmous if you like, roasted red pepper or caramalised onion both work well. This recipe is a mouthwatering leftovers idea from our slow cooked beef tagine dish. The leftover meat needs to be thoroughly reheated until piping hot and should never be reheated more than once.
Take each tortilla or flatbread, spread on 1/4 of the houmous, then a few slices of red pepper and some salad leaves. Add 1/4 of the beef and tightly roll up into a wrap, repeating with the rest of the wraps.
If taking to work wrap in nonstick baking paper or foil.
