I made this on very short notice when we had people over for a BBQ. It's super quick and easy to make and tasted amazing with all the lemon!

Peel Garlic and finely chop and put in a clean bowl

Add all the other ingredient in the bowl together with the zest and juice from the lemon

Take the chicken thighs and lay them flat on a clean surface. Bash lightly until they are all the same size

Put the chicken thighs in the marinade and leave for 30min

When ready, remove the thighs from the marinade and rub with a little oil. Put on the BBQ skin side down first and turn half way through cooking

If you want you can thread the thighs onto a couple of soaked bamboo sticks to keep them flat while cooking and this will make them easy to turn! The longer you leave in the marinade the better!
