Pre-heat the oven to Gas 6, 200°C, fan 180°C.
In a large frying pan, heat 1tbsp olive oil and gently fry onion and garlic over a medium heat until softened.
Add tomatoes basil and sugar to the pan and salt and pepper to taste. Bring to the boil then lower the heat and simmer until the tomatoes reduce and thicken.
Layer 3 of the lasagne sheets on top of the sauce, followed by the cream cheese. Make another layer of lasagne sheets on top of the cream cheese and next a layer of roasted peppers.
Finally make a layer of lasagne, top with the remaining tomato sauce and sprinkle with the grated cheese.
Place in the oven for 25-30 minutes until bubbling.
