Mother's pineapple upside down cake recipe

Mix 6oz of margarine and 6oz of brown sugar, and line a large baking tin with mixture.

Next mix 4oz of margarine, 4oz flour, 4oz of sugar, 2 eggs, 1/2tsp of bicarbonate soda until fully mixed, and put to one side.

Place the pineapple rings in the tin on top of the brown sugar mix. Starting in the centre, work your way out, even cut some in half to work around the edge of the circle, then put the cherries in all the gaps left.

Pour the cake mixture over the top of the brown sugar and pineapples. Smooth the top, and place in the oven at Gas mark 6 for 40 minutes.

Dont worry if the top goes crispy brown, just keep using a metal skewer to check the insides cooked. Serve when ready.
