My two daughters love to roll up their sleeves and be involved with the family cooking. These meatballs are so much fun for them make and prove a firm family favourite in our house. They are nutrional as well as quick and easy to make!
Put the minced pork, onion, carrot and sage into a mixing bowl. Season with black pepper and mix thoroughly. Use your hands to shape the mixture into 20 meatballs.
Heat the vegetable oil in a large non‐stick frying pan. Add the meatballs and cook over a medium high heat for 5 minutes, stirring occasionally, until browned.
Add the chopped tomatoes and stir in the tomato puree. Heat until simmering and then lower the heat and cook gently for 15 minutes, stirring occasionally
Meanwhile, cook the linguine in boiling water for 10‐12 minutes- until soft. Drain thoroughly.
Serve onto plates and add the meatballs in their sauce. Accompany with either seasonal vegetables or salad
