Preheat the oven to gas 7, 220°C, fan 200°C. Drain the mozzarella and cut each ball into 4 even rounds, making sure the pieces aren't too wet. Season then roll in the breadcrumbs and arrange on a lined baking tray. Bake for 10-15 minutes until golden and crispy on the outside. Remove and arrange on a serving plate with some of the fritters cut. Garnish with a little pepper and sprigs of coriander leaves before serving.
