Heat the grill. Cut the piece of baguette in half through the centre and then slice each piece lengthways. Spray the soft top of each piece with 2 squirts of the cooking oil spray then rub the garlic clove over each. Toast until golden. Spread each piece with a quarter of the tapenade. Slice the mozzarella and top each crostini with a quarter of it. Arrange tomato slices on top, drizzle over a little Balsamic vinegar and grill under high heat for 2 minutes or until the cheese is lightly melted. Serve immediately, decorated with the basil leaves.
