M'smmens with orange jam recipe

Sift the flours and salt together in a large mixing bowl.

Add the oil and stir well. Then add the warm water a little at a time, mixing well between additions, until a soft dough starts to come together. Turn out onto a lightly floured surface and knead well for 6-8 minutes until you have a smooth, elastic dough. Roll out golf ball-sized pieces of dough on a lightly-floured work surface into rectangular shapes.

Heat a large cast-iron frying pan over a moderate heat until hot. Cook the dough in the pan for 30-45 seconds on both sides until brown dots appear.

Remove from the pan and brush one side with a little of the warmed honey before arranging in serving dishes.

Serve with pots of the orange marmalade or jam for dipping.
