Spin a cake around and make it healthier by adding fresh grated apple, muesli and Brazil nuts. 

Preheat the oven to gas 3, 170°C, 150°C.

Beat the butter and caster sugar together with an electric whisk until pale and smooth. Sieve the flour and baking powder into the bowl and stir until incorporated. Stir in the eggs and grated apple and fold in along with the muesli and Fairtrade Brazil nuts.

Pour the mixture into a lined loaf tin and bake for 1-1 1/2 hours. Check after one hour and if the top looks like it is browning too quickly before the centre is cooked, cover with foil.

Check to see if the cake is cooked by pushing a skewer into the middle – it should come out clean. Remove to a wire rack and leave to cool.
