Best eaten on the day it’s made. Lovely for breakfast with lots of butter and jam.
Pre-heat oven to Gas 7, 220 °C, fan 200 °C.
Put the flour, muesli , salt and bicarbonate of soda into a bowl.
Add the butter and then pinch them into smaller pieces - working them into the flour with your fingers until you obtain a grainy texture. Stir in the buttermilk and mix together to form a soft dough.
Turn the dough out on a floured piece of parchment paper, resting on a baking tray and shape into a round loaf.
Bake for 35 mins or until it has risen, is golden and it sounds hollow when the base is tapped underneath. Serve and enjoy.
