Get 2 identical glasses, crack your eggs into one the glasses and in the other measure the exact same amount of flour. Put the eggs into a food processor. In the now-empty glass measure the exact same amount of milk as you have flour.
Add the flour to the eggs in the food processor and blitz. Add the milk and blitz, add seasoning (pinch of salt and pepper), blitz again.
Pre-heat about ¾tsp of oil in each hole in a muffin tin in a hot oven for about 15 minutes before pouring your mix into each hole. Do not pour too much mixture into each hole, the less you pour the crispier they will be and the higher they will rise!
I usually pour around an egg-cup or so into each hole, get them back in the oven asap. Do not open the oven until they are really golden otherwise they sink.
