Pour the white wine into a non-stick frying pan heat until boiling. Add the garlic and simmer for 5 minutes to reduce slightly.
Cook the pasta in boiling water according to packet instructions and cook until al dente.
Meanwhile cook the sweet potato in the microwave until soft (about 2-3 minutes). Add the remaining ingredients to the wine along with the sweet potato and stir to combine.
Cook gently until the cheese has melted and serve immediately.
