I made this pie using healthy living Creme Fraiche, mushrooms and leeks all given to me via the Tesco Orchard program. Thank you Tesco for a delicious meal
Saute the chopped onions and sliced leeks in the butter until they start to soften.
Add the crushed garlic, mixed herbs and quartered mushrooms and continue to cook gently for 5 minutes.
Crumble the stock cube over the mixture and add the creme fraiche. Add water at this point if there is not enough liquid from the mushrooms.Season to taste
Roll out 2/3rds of the pastry and line a deep pie dish. Put the filling into the dish and spread the grated cheese over it. Top with the remaining pastry
Brush with milk or beaten egg and cook at 180 C for 45 minutes
